Tiramisu
Espresso-soaked ladyfingers layered with a light mascarpone cream and a heavy dusting of cocoa. Make it the day before.
Dip each ladyfinger for one second per side. Any longer and the whole thing goes soggy by morning.
Ingredients
- 4 egg yolks
- ½ cup sugar
- 16 oz mascarpone, cold
- 1 cup heavy cream, cold
- 1½ cups strong espresso, cooled
- 3 tbsp dark rum or coffee liqueur
- 24 Savoiardi ladyfingers
- 2 tbsp cocoa powder
Method
- Whisk the yolks and sugar over a pot of barely simmering water until pale, thick and 160°F, about 5 minutes. Cool 10 minutes.
- Beat the mascarpone into the yolks until smooth. Whip the cream to soft peaks and fold it in.
- Stir the espresso and rum together in a shallow dish. Dip each ladyfinger one second per side and lay 12 in an 8 by 8 dish.
- Spread half the cream over them. Repeat with the rest of the ladyfingers and cream.
- Cover and chill at least 6 hours, ideally overnight. Dust heavily with cocoa right before serving.
