Crispy Chili-Lime Wings with Crack Spice
Oven wings that come out shatter-crisp thanks to a baking powder trick, tossed hot in butter, lime and Crack Spice Pinche chili-lime seasoning.
Baking powder, not baking soda. It raises the skin's pH so it browns and blisters like it was fried. And dry the wings like you mean it.
Ingredients
- 3 lb chicken wings, flats and drums, patted very dry
- 1 tbsp baking powder, aluminum-free
- 1 tsp kosher salt
- 3 tbsp unsalted butter, melted
- 2 tbsp Crack Spice Pinche chili-lime seasoning
- 2 limes
- ¼ cup cilantro, chopped
Method
- Heat the oven to 250°F with a rack in the lower third. Toss the wings with baking powder and salt until evenly coated.
- Arrange on a rack set over a foil-lined sheet. Bake 30 minutes to render the fat.
- Raise the oven to 425°F and bake until deep golden and crackly, 35 to 40 minutes.
- Whisk the melted butter, Crack Spice and the juice of one lime. Toss the hot wings in it, then top with cilantro and serve with lime wedges.
